The ideal roux should have a slightly nutty aroma and should not have a burnt or overly toasted smell. To make a roux, you start by melting butter in a saucepan over medium heat. Once the butter is melted, gradually whisk in an equal amount of flour to create a smooth paste. Continue to cook the roux, stirring constantly, until it reaches your desired level of color - a light roux for a white sauce, a medium roux for a brown sauce, or a dark roux for gumbo. Remember to adjust the heat as needed to prevent burning. **

An alternative to a roux is a slurry, which is a mixture of equal parts flour and cold liquid (such as water, broth, or milk) that is whisked together and then added to a hot liquid to thicken it. Another alternative is using a cornstarch or arrowroot slurry, which is made by mixing cornstarch or arrowroot powder with cold liquid and then adding it to a hot liquid to thicken it. These alternatives are great for thickening sauces, soups, and gravies without the need for butter or oil like in a traditional roux. **

The rough, matte side is usually designed to be placed against the ground or any surface it is covering. **
